According to Matt Ketterman, journalist from the Santa Barbara Independent, “400 years ago, a typical Santa Barbara meal would be loaded with acorns”. 1 How nutty is that? Maybe not so much when we are coming to grips with a possible food shortage causing us to look for safe and nutritious alternatives.
Did you know that acorns are gluten-free and have up to 15 grams in protein? Yah, it has 37% fat but when you are hungry and there are slim pickings available, storing a little extra body fat in lean times is not a bad thing, is it? LOL
Also, have you notice the price of nuts lately? That is, of course, you can find them.
After reading Ketterman’s article, I realized how easy it was to prep acorns and of its versatility when combined in recipes such as pancakes, cookies, soups, and burgers. You can even make acorn coffee! I wonder, do you think acorns could be used in everybody’s holiday favorite snack ‘Checks® Party Mix’?
Even though it usually takes two hours to go through the prep, a bulk batch for storage renders it available for later use without the muss.
